All-Purpose Seasoning

This is a seasoning we use in our Dominican kitchen. Other Caribbeans make it and there are many variations, but this is the way my mom makes it which makes it the proper and perfect way. LOL.

Sofrito

First of all, I find you get a better outcome if you use a food processor vs blender. This is just my preference.

3 sweet onions
1 bunch of cilantro
1 handful of garlic cloves, peeled
1 bunch of scallions "green onions"
1 bunch of parsley

Chop the onions into about 8 pieces each. The food processor "likes" smaller pieces of food better. Add all the ingredients, little by little, until everything is finely chopped. Add to a jar, keep in your fridge and add to your food as needed!

  2. yeah i use that, but not as much. my mom cooks pretty much everything with the sofrito so i'm used to it. and it's a salt-free way to flavor your food with deliciousness!

  3. gotcha. maybe i'll make it this weekend. i dont usually cook much. so i was just wondering if it goes bad if it just sits in the fridge for a few weeks.

  4. No, I keep it in my fridge all the way in the back. It keeps very well. Just make sure it is in a SEALED container.
